They likely isolated one strain that had good flavor. If you harvest from the wild, from your beard or whatever, you will get many strains and likely bacteria as well, and not all of these will produce a beer with good flavor.

I've been to that brewery a couple of times. Got a hotel next door once and went there and drank all of their beers, and there were 14 beers or something ridiculous. Some are great, some only average. That was more than 10 years ago, mind you.
